Macadamia
Nut Encrusted Mahi- Mahi
4 Mahi Mahi Fillets (6 ounces)
1 cup of Macadamia nuts
finely chopped
¼ teaspoon of minced
garlic
½ teaspoon of dried or
fresh basil
1 teaspoon of minced
cilantro
Salt & Pepper to
taste
½ cup
Flour
2 large eggs lightly
beaten
2 tablespoons of Olive
Oil
Use food processor or blender process the nuts,
garlic, basil and cilantro briefly until finely grounded. Transfer to dish.
Place the flour in a second dish and the eggs in a third
dish.
Remove any skin and bones from the
fillets.
Sprinkle each side with salt &
Pepper.
Turn the fillets in the flour, then the eggs and
finally in the macadamia mix. Press gently to help the nuts to adhere.
Melt butter in skillet (nonstick) with olive oil over
medium high heat.
Sauté the fillets for about 3 minutes a side, or until
well browned and cooked through.
A fruit sauce may be served over the
fillets.
